This nectar is a blend of 65% Pinot Noir, 30% Chardonnay, 5% Pinot Meunier. First press juice of mainly Grand and Premier Crus grapes from the heart of the Champagne wine-growing area. The must undergoes a partial malolactic fermentation. 27% of reserve wines, aged in wooden barrels using the solera system, are included in this blend. The divine juice has aged on the lees in the House’s cellars at a constant temperature of 12°C for three years. This bottle is based on 2016 harvest and it was disgorged in June 2019. Dosage is 0g/l. In the glass the wine has a beautiful yellow lemon color. The intensity is pale. The pèrlage is very fine and persistent. At the nose, the flavor intensity is medium plus, with sharp hints of lemon peel, citrus, crunchy apple, and a succulent pear combined with a pleasantly sour cranberry. Notes of chalk and wet stone give a vibrant minerality. The secondary aromas include the bread crust, brioche, but also the butter and a light cream. The tertiaries remember mostly the toasted almond.
In the mouth, the wine is dry with high level of acidity. The intensity is pronounced. The texture is creamy and the flavor lasting is medium plus.
This nectar has been a nice surprise. Despite being a non dosé, it is extremely easy to drink, not angular but rather creamy and smooth. Given its marked minerality and citrusy notes, it is perfect as aperitivo, or to pay our tribute to the sacrifice of raw langoustines and prawns jumped directly from the sea into our plate.
