Wine Making Techniques
This nectar is a 100% Chardonnay from vineyards planted in Trentino Alto Adige. The grapes are harvested by hand in mid-September. After the fermentation, the divine juice ages on selected yeasts, from Ferrari's own cultures, for about 5 years. My bottle was disgorged in 2019. Salute!
In the glass the wine has a noble yellow gold color. The intensity is pale. The pèrlage is sinuous and persistent. At the nose, the flavor intensity is medium plus, with hints of white flowers, lemon peel and green apple. Notes of wet stone and flint give a quite sharp and pleasant minerality. The long aging on the lees donates perfumes of bread dough, bread crust and yeast. The tertiary aroma includes toasted almond, dry apricot,
In the mouth, the wine is dry with high level of acidity. The intensity is medium plus with fragrances of citrus zest, pineapple and white pepper, but also notes of bread crust, yeast, dried apricot, and toasted almond. The texture is delicate and the flavor lasting is medium plus.
A very elegant Blanc de Blancs produced in Northern Italy. This nectar has spent about five years sur lie, developing a very compelling aromatic bouquet. It includes scents of white blossoms, citrus peel, green apple and pineapple, enriched by fragrant hints of bread crust, toasted almond and dry apricot. Despite the high acidity and vibrant minerality, every sip is opulent and “warm”.
