Wine Making Techniques
This nectar is a blend of Pinot Noir (50%) and Chardonnay (50%). The divine juice spent spends at least eight years on the yeasts. Dosage is 5g/l. Santé!
In the glass the wine has a beautiful yellow lemon color. The intensity is pale. The pèrlage is extremely fine and persistent. At the nose, the flavor intensity is medium plus, with beautiful notes of blossom, lemon peel, peach and white pepper. The aromatic palette reveals also hints of brioche and bread crust, but also butter and a light custard. The tertiaries aromas remember the toasted almond and hazelnut. These warm notes are perfectly balanced by a fine minerality.
In the mouth, the wine is dry with high level of acidity. The intensity is pronounced. The texture is creamy and the flavor lasting is long.
Now we are talking! I tasted this vintage already two years ago and I wasn’t especially impressed. But now, I fell in love with it. At the nose, this nectar is the archetype of the elegance, the triumph of the harmony. Delicate perfumes of blossom and lemon peel are perfectly combined with hints of toasted almonds and hazelnut. The rich secondary aromas are balanced by a lively minerality. Close to perfection, but still achievable… just a matter of time.
