This nectar is made with 100% Negroamaro grape from 40 years old vineyards in the heart of Salento. They are harvested at the end of September. The fermentation takes place in temperature controlled stainless steel tanks at 25° C, and it lasts for 10-15 days, while the maceration for 7-10 days. After that the divine nectar sleeps for 6-8 months in 225l French oak barrels at the second, third and fourth passage. Salute!
In the glass the wine has a very charming garnet colour. The intensity is medium. It is clear with no traces of deposits.
The aromas intensity is pronounced. Even without swirling, just but pouring the glass, a triumph of red cherry, sour cherry and a light sweet strawberry comes out. The aromatic bouquet is enriched by the fragrance of the violet and the sharpness of the black pepper. Despite few months in oak, the secondary flavours are quite clear. There is the sweet note of the vanilla, the exotic perfume of the cloves, the virile hints of toast, smoke, charred wood and resinous. The long stay in bottle (more than 9 years) donates the notes of earth, wet leaves, subtle farmyard, fine leather and meaty. I cannot stop myself sniffing into the glass!
In the mouth, the wine is dry with a medium plus level of acidity. The tannins are still high, but very rounded and soft. You can feel them on your teeth. The alcohol is high (14.5%) but fully tamed. The flavour intensity is pronounced, with the red fruits becoming riper. Especially the red cherry lingers in the palate for a while. There are notes of coffee and dark chocolate. Despite the age, a light violet introduces the proper characters of the aromatic palette: the tertiaries. There are fragrances of mushroom, earth, myrtle, leather, tobacco and dried cranberry.
I love this nectar. It is an authentic masterpiece and one the best expression of Negroamaro grape. Without mentioning the price. I bet that in a hypothetical blind tasting, most of the people may confuse it for a Barolo. It has the elegance of a Burgundy and the richness of a land kissed by the sun every day. It is balanced, complex and the pronounced intensity indulges the innermost desired of our taste buds for long.
