Satèn 2015 DOCG
This nectar is a 100% Chardonnay from 20 years old vines in Franciacorta, harvested in late August/early September. The crops ferment for 20 days in stainless steel after the inoculation of selected yeasts. Also partial malolactic fermentation takes place. Next, a portion of the divine juice ages for 7 months in steel, and the rest in barrique. After the cold static stabilization, there is the first bottling. The wine ages on the lees for 30/36 months. The disgorgement takes place in December, and the sparking wine ages further 3/4 months in the bottle before being released on the market. The dosage is 6 gr/l.
In the glass the wine has a beautiful lemon color with green hues. The intensity is pale. The pèrlage is extremely fine and persistent. At the nose, the flavor intensity is medium, with hints of blossom, lemon zest, almond and lively mineral notes of wet stones. The long aging on the lees donates perfume of brioche while the malolactic fermentation has given hints of cream and butter.
In the mouth, the wine is dry with high level of acidity. The intensity is pronounced with fragrances of hawthorn and citrus, but also a sharp mint, black pepper, zest and a bitter almond balanced by a sweet note of honey. The texture is creamy and the flavor lasting is long.
Such a pleasant surprise! This nectar is beautiful to see dancing into the glass, with its sinuous and vivacious pèrlage. But it is on the palate that it surprise us. The tasting buds are bewitched by a creamy wave of hawthorn, citrus, almond and a succulent hint of honey. The comment of the table companions has been unanimous: “Che buono!”. It is pure pleasure to be drunk by its own.
