Wine Making Techniques
This sparkling wine is 100% Fiano Minutolo Bianco from vineyards located 450m asl. After the manual harvest, the grapes are pressed directly. Follow the cold setting and fermentation in stainless steel tanks at 16°C for two weeks. The second fermentation in bottle and aging for 48 months on the lees at 11°C. Salute!
In the glass the wine has a yellow gold color. The intensity is medium to pale. The pèrlage is persistent but quite rough. At the nose, the flavor intensity is medium plus, with scents of honeysuckle and mimosa, followed by notes of lemon peel, grapefruits and flint. The long aging on the lees donates flavors of bread dough and bread crust. The tertiaries are quite developed as well, remembering hints of honey, wax, toasted almond and candied citrus. On the palate, the aroma intensity is medium plus, the acidity is high, the alcohol is high (13%) and the lasting is medium plus.
A nice Metodo Classico from Puglia. The nectar gives off scents of yellow flowers, lemon peel and grapefruits. The 48 months spent on the lees has enriched the aromatic bouquet with hints of bread crust, while the tertiaries remember honey, wax, toasted almond and candied citrus. Its pleasant minerality makes it very versatile. On the negative side, its pèrlage is quite rough. It seems to drink Perrier water rather than a fine sparkling wine.
