This nectar is a 100% Negroamaro. Vinification is carried out after manual harvesting of the grapes. The destemmed grapes macerate for a long time, constantly immersed in the must. The fermentation, induced by selected yeasts, is subjected to rigorous temperature control. The divine juice ages in small wooden barrels for about eight months. Salute!

Appearance

The wine has a ruby color. The intensity is medium.

Nose

The aroma intensity is medium plus. The aromatic palette reveals scent of violet and rose, followed by ripe wild red fruits, with an hint of chili pepper. The secondary aromas remember the vanilla, cloves, charred wood, and toast. The tertiaries are still feeble, but notes of leather are quite clear.

Palate

In the mouth, the wine is dry with high level of acidity. The alcohol is high (i.e. 14.5 %), and it gives a nice heatwave, especially at the first sip. The tannins are medium plus. On the palate, the wine is an explosion of ripe sour cherry, kirsch, red fruits preserved in alcohol and rose. We find also hints of fine jam, Mediterranean bush, and black pepper. The secondary aroma include vanilla, cloves, charred wood and toast. The tertiaries are quite delicate with scent of dried flowers. The intensity is pronounced and the lasting long.

Conclusion

A nice and well-made Salice Salentino with a lot of wild red fruits, spices, charred wood and toast. It ticks all the boxes: it is balanced, it has length, intensity and quite complex with surprising hints of Mediterranean bush and chili pepper. Nevertheless it is quite far to thrill me .
