This nectar is a 100% Nebbiolo come from vineyards made up of soil that is particularly rich in clay and limestone. The grapes are handpicked then, after being removed from the stalks, they are soft pressed. Fermentation's temperature is controlled in thermo conditioned vats 32° degrees C. Maceration of 8 days with racking of the product only when all the sugar has been transformed into alcohol. The wine is aged for 3 years in traditional Slavonian oak casks (of 30, 120, 180 hectoliters). This Barolo Riserva completes its fining in the bottle and can go onto the market only after about 6 years from harvest. Salute!

Appearance

In the glass the wine has a charming garnet colour. It is clear but with some sediment towards the end.

Nose

The aromas intensity is medium plus. Also without swirling, the nostrils are bewitched by a fresh violet. Then succulent wild red fruits and sharp black pepper come out. The aromatic bouquet is characterized by refreshing balsamic notes as the wet bramble. The secondary aromas are a fine vanilla, feeble clove and smoke. The tertiaries remember the leather, forest floor, truffle, dark chocolate and dried grass.

Palate

In the mouth, the wine is dry with a high level of acidity. The tannins are high too, leaving our palate total anesthetized and with an incredible polishing sensation. The nectar has a pronounced flavour intensity of ripe wild red fruits, with hints of jam. A charming notes of dried flowers and spices make enrich the aromatic palette. The already mentioned secondary and tertiary aromas indulge also our tasting buds. The lasting is long.

Conclusion

I really like this nectar! It is a bit austere at the nose, but then it explodes in the mouth with a triumph of ripe wild red fruits and virile tertiaries remembering the leather, forest floor, truffle and dark chocolate. The tannins are still quite punchy, leaving a lovely feeling of polishing on our teeth and gum. It is perfect with a rare fillet but also drunk by its own, to better appreciate the elegance and the more feminine part of its aromatic bouquet.
