This nectar is a 100% Nebbiolo coming from vineyards made up of soil that is particularly rich in clay and limestone. The grapes are collected exclusively by hand and quickly taken to the cellar where they are destemmed and softly pressed to extract only the most noble and aromatic parts from the skins and the outer portion of the grape. Fermentation takes place at a controlled temperature in thermo-conditioned tanks. Maceration lasts for 10 days. During this time, the wine is regularly recycled from the bottom to the top of the tank so that the must takes on all the trace elements present in the skins and delicately extracts the color. The first racking is done when the natural sugars of the grapes are totally converted to alcohol. Barbaresco Riserva ages two years in the traditional large Slavonian oak barrels, and completes its fining in the bottle and can go onto the market only after about 4 years from harvest. Salute!

Appearance

In the glass the wine has a beautiful ruby colour with some garnet shades. The intensity is medium to pale.

Nose

The aromas intensity is medium plus. Also without swirling, the nostrils are bewitched by a fresh violet. Then crunchy wild red fruits and sharp black pepper come out. The aromatic bouquet is characterized by refreshing balsamic notes as the wet bramble and liquorice. The secondary aromas are a marked charred wood, toast, coffee and dark chocolate. The tertiaries remember the leather, forest floor, and earth.

Palate

In the mouth, the wine is dry with a high level of acidity. The tannins are medium high. The nectar has a pronounced flavour intensity of wild red fruits preserved in alcohol, with a light bitter aftertaste. A charming notes of dried flowers and spices enrich the aromatic palette. The already mentioned secondary and tertiary aromas indulge also our tasting buds. The lasting is long.

Conclusion

It is a very elegant Barbaresco. A concentrate of crunchy wild red fruits, spices and dried flowers tease our senses. The secondary and tertiary aromas complete the aromatic bouquet, making it quite complex and intense. This nectar is a perfect companion for any generous meal, but even gratifying when drunk by its own.
